    This is a fine book. The tone is welcome and well chosen. The writing is clear and precise. Blanning has provided concrete descriptions of taste and how to enable it, also providing fascinating exercises to assist the tasting process. The focus is on developing individual subtlety in understanding food and wine, rather than pretentious performativity. I am currently - with Mick Winter and Bryn Gandy - writing a book on NZ wine with attention to regional development and technology. This book offe This is a fine book. This book offers some incisive statements that are of value to this study. But if a reader would like to improve their relationship with both wine and their sense of taste, this is an outstanding book to assist that journey.
